Anti-Anxiety Lemon Balm Pesto

Pesto is fabulous as pasta sauce or added to meat dishes and kebabs.
- 3/4 cup lemon balm leaves firmly packed
- 1/2 cup pine nuts
- 3/4 cup parmesan cheese
- 1/4 cup extra virgin olive oil
- 3 tbsp lemon juice
- 1 tsp fresh chives
- salt and pepper to taste
Place all ingredients in a food processor and pulse until smooth.
Add salt and pepper to taste.
Store in an airtight container for up to one week in the refrigerator or 3 months in the freezer.
